Nowadays olive growing needs to continue to evolve in the production of high quality oils, not only must focus on producing quantity and reducing production costs. This quality obtained, must report an extra to the farmers, each time the consumers are more demanding, and those products that stand out for their quality can be differentiatedin in this competitive market. A correct fertilization plan not only influences the production and production costs, the physicochemical characteristics of the oils are altered In the present project the action of seven foliar potassium rich treatments is evaluated, both in factors of agronomic character, and related to the composition of the oils. The trial was carried out in the IFAPA Centro Venta del Llano experimental farm in Mengíbar (Jaén). The farm is an adult olive grove of the variety "Picual" with a planting frame of 12 x 12m, with an approximate planting density of about 70 trees / ha, which has drip irrigation. According to the results obtained, treatments rich in potassium have not shown better results in comparison with the control or for the factors evaluated in relation to the fruit, (total production, average fruit weight, maturity index, pulp/bone ratio, fruit moisture, fat yield), neither those related to olive oil composition (acidity, peroxide index, K232, K270, pigments, K225, total polyphenols, and volatile compounds). Possibly, potassium has not had a great impact on the results obtained, because foliar analyzes have shown critical values for this nutrient, well below the optimum leaf level. Potassium deficiencies take time to correct, once these critical levels are reached, the olive tree is not very efficient in its absorption, so it is recommended to perform potassium-rich treatments during several years. Another factor to take into account, the treatments have been carried out only during the year 2018, insufficient time to correct low levels of potassium in leaf. If the trial continues in the next few years, significant differences between the treated trees and the control will surely be appreciated
