Water is a limiting factor in the production of ruminants mainly in the semi-arid region of Brazil due to uneven distribution and prolonged periods of low rainfall, which limits complementing the supply of bulky food for animals. In view of the edaphoclimatic adversities of the semiarid region, goat breeding has been replaced as the main alternative, as they are animals with greater food selection ability due to the lip anatomy, in addition to being well adapted as conditions of arid climates. With this, the forage palm is important due to the mechanism that allows large amounts of water to be stored and for its adaptation to the edaphoclimatic conditions of the Northeast region in Brazil. Therefore, the objective was to evaluate the physical quality, the chemical composition and the fatty acid profile in the goat meat fed with forage palm instead of Tifton-85 hay. It is recorded the inclusion of 25 and 55% of forage palm in replacement of Tifton-85 hay in the kid’s diet, as well as the control diet that did not have forage palm in its composition. The meat of the animals that received 55% of forage palm presented a lower percentage of moisture (76.11%) in relation to the meat of the animals receiving a control diet (77.57%). The lipid content in the meat of animals fed with 25 and 55% forage palm was 1.33 and 1.26%, respectively, these values being lower in relation to the lipid content of the animals in the control (1.56 %). The inclusion of 55% of the forage palm provided an increase in the content of the total monounsaturated fatty acids in the meat (52.71%) in relation to the meat of the control animals (37.75%). However, the content of total polyunsaturated fatty acids was higher for the meat of the control animals (21.44%) in relation to the meat of the animals fed with 55% forage palm (6.90%). It is recommended to replace Tifton-85 hay with 55% forage palm, as it provides a lower content of lipids and a higher content of monounsaturated fatty acids in kid meat.
