Titre : Physicochemical Evaluation of Bees Honey

Résumé
The present study was conducted to evaluate the physicochemical properties ofa sample of honey collected from marketby physical and chemical analysis. The results were found to berefractive index(1.515)pH value(4.7)moisture(8.85%)Ash(0.99%) free acidity(68meq/kg),the ratiosof glucose(24.84%) sucrose(37.56%) and fructose(0.64%) were determined by HPLC instrument. The concentration ofpotassium (8.4), sodium (107.92), and phosphorus (1.1)were determined in (ppm). المستخلص أجريتفي هذه الدراسة تقييم الخواص الفيزيائية و الكيميائية لعينة عسل جمعت من السوقباستخدامطرقالتحليلالفيزيائيةو الكيميائية و وجدت النتائج المتحصلعليهاأن قيمة معامل الإنكسار (1.515) و الأس الهيدروجيني (4.7) و الرماد (0.99%) و الحموضة الحرة(68ملي مكافئ/كجم) و الرطوبة النسبية (8.85%) و بإستخدام جهاز كروماتوغرافيا الضغط العالي للسوائل (HPLC) تم تحديد نسب كل من الجلوكوز (24.84%) و السكروز (37.56%) و الفركتوز (0.64%) كما تم تحديد تركيزالبوتاسيوم (8.4) و الصوديوم (107.92) و الفسفور (1.1)(جزء من المليون )
