Résumé
El presente proyecto de investigación tiene como objetivo analizar la gastronomía tradicional de Riohacha, D.T y C, como elemento de turismo y desarrollo económico local ; el mismo es de suma importancia para el Distrito Turístico y Cultural de Riohacha, en el cual se evidencia que existe una importante conexión entre el turismo y la gastronomía, relación que no puede ser ignorada, y en tanto, puede ser utilizada como factor de desarrollo local (OCTR, 2016). Indicar que la investigación es de carácter descriptivo, de acuerdo con Hernández, Fernández & Baptista (2010, p. 80), los estudios descriptivos buscan especificar las propiedades, las características y los perfiles de personas, grupos, comunidades, procesos, objetos o cualquier otro fenómeno que se someta a análisis. Fue necesario realizar una revisión bibliográfica y documental, para profundizar en el conocimiento de las variables sobre la gastronomía tradicional de Riohacha, D.T y C, y determinar los platos típicos ofertados a los turistas. Los resultados de la investigación permitieron determinar que la gastronomía tradicional de Riohacha, según la percepción del turista, se ubica como una de las principales atracciones y motivaciones, el cual es un complemento turístico, en buena medida por la novedad de vivir experiencias únicas e inigualables.

This research project aims to analyze the traditional cuisine of Riohacha, D.T and C as an element of tourism and local economic development ; it is such importance for the Tourist and Cultural District of Riohacha, in which it is evident that there is an important connection between tourism and gastronomy, a relationship that cannot be ignored, and in the meantime, it can be used as a factor of local development (OCTR, 2016). lndicate that the research is descriptive, according to Hernández, Fernández & Baptista (2010, p. 80), descriptive studies seek to specify the properties, characteristics and profiles of people, groups, communities, processes, objects or any another phenomenon that is subject to analysis. lt was necessary to carry out a bibliographical and documentary review, to deepen the knowledge of the variables about the traditional gastronomy of Riohacha, D.T and C, and to determine the typical dishes offered to tourists. The results of the investigation allowed to determine that the traditional gastronomy of Riohacha, according to the perception of the tourist, is located as one of the main attractions and motivations, which is a tourist complement due to the novelty of living unique and unparalleled experiences.
