Résumé
One of the possible uses of coloured cactus pear fruits is as fruit leathers or fruit bars for healthy snacks. In this study, fruit leathers were processed using different proportions of cactus pear and apple pulp, sugar, sucralose and flax seeds, to satisfy the growing demand for natural foods, high in fiber and with low additive levels. Both orange and purple cactus pear bar formulations accounted for 75% of cactus pear pulp, mixed with 25% apple pulp with skin. In treatments which incorporated flax seed, its proportion was 1% and the content of sucrose and sucralose was 6% and 0.01%, respectively. The dehydration process was done in an Excalibur dehydrator tray, model 2900 (58± 2ºC). Chemical, physical and sensory characteristics were determined in the different blends and final products. The bars had a yield close to 20%, a moisture between 8 and 9.7%, an Aw between 0.61 and 0.64, and a soluble solids content between 72.8 and 83.2º Brix. Their total polyphenols content ranged from 136.3 to 166.2mg EAG/100g. The insoluble, soluble and total dietary fiber of bars with flax seeds in both trials fluctuated from 20.1 to 36.4, 4.3 to 7.5, and 24.3 to 43.9%, respectively. These treatments which included flax seeds showed significantly greater values of total dietary fiber and lipids. There were no sensory differences among the formulations, all of them showing a good acceptability. The fruit leathers showed an attractive colour and taste and could be an interesting alternative for the development of agro-industry associated to fruit growing in arid zones.
