Résumé
The objective of this study was to evaluate three Sudanese pearl millet cultivars for their physical, chemical and some nutritional and anti-nutritional properties.The cultivars were Dembi, Kordofani and Ugandi, and were obtained from El-Obeid Agricultural Research Station. Hectoliter weight , thousand kernel weight, color test, proximate analysis, anti-nutritional factors, in vitro protein digestibility, minerals content and amino acid composition were determined. The results obtained showed that the Ugandi cultivar had higher value of hectoliter weight (kg/ hectoliter),with no significant difference from the Dembi cultivar. The latter cultivar had higher value of the thousand kernel weight, with no significant difference from the Kordofani cultivar, but had lower degrees of the colors(blue, yellow and red). Proximate analysis showed that protein content was 12.37%, 16.72% and 13.11% for Dembi, Kordofani and Ugandi cultivars, respectively, whereas the Kordofani cultivar showed significant difference. Also the results showed high oil content of 6.35%, 5.17% and 6.08% for Dembi, Kordofani and Ugandi cultivars ,respectively, and the differences were significant. Results of antinutritional factors showed Ugandi cultivar gave higher value of polyphenols and phytic acid, where significant differences among the three cultivars were noticed, while no significant differences were noticed in tannins content. The higher value (50.22%) of in vitro protein digestibility was noticed in Kordofani cultivar. Results of minerals ix content showed that the phosphorus and potassium gave high values, while the copper gave lower values. Results of amino acid showed that Isoleucine , leucine and valine contents were higher than the recommended levels (g/100g protein) by FAO/WHO/UN (1985) , while lysine, methionine and phenylalanine contents were lower. Nutritionally, Kordofani cultivar showed better quality.
