Résumé
In this study three baobab fruit pulp samples were obtained from three different locations (Kordofan, Blue Nile and Darfur) and examined for chemical composition and physical properties. The three raw materials were found to contain 8.24, 7.86 and 8.59% moisture, 5.05, 5.02 and 5.51%s ash, 4.46, 1.48 and 3.20% fibre, 5.15, 5.57 and 5.15% protein and 1.50, 1.60 and 1.14% fat, respectively. Also the three samples were found to have 19.07, 33.20 and 46.10 mg/100g Na, 12.44, 38.35 and 35.12 mg/100g K, 399.46, 394.66 and 386.53 mg/100g Ca, 6.69, 6.00 and 6.49 mg/100g Fe and 90, 92 and 91 mg/100g P, respectively. The same unprocessed samples showed 28.70-31.24% total sugars, 7.40-8.91% reducing sugars, 19.73-22.57% non reducing sugars and 347.33-370.66 mg/100g ascorbic acid, respectively. The raw material from Kordofan when was spray dried showed significantly (pX04 ;0.05) lower moisture, ash, fibre, protein, ascorbic acid, Na, Ca and Fe contents, significantly (pX04 ;0.05) higher fat, total sugars, K and P contents and the same levels of reducing sugars and non reducing sugars compared to the original material. Pulp of the three samples showed 0.32-0.47 g/ml bulk density, 44-55 cps viscosity and the same level of colour (1.30-1.76), on the other hand the spray dried powder showed significantly (PX04 ; 0.05) higher bulk density (0.52 g/ml) and similar level of colour. The four types of spray dried products (Ext pure, Ext gum, Ext CMC and Ext sugar), produced from Kordofan raw sample 12% TSS pure extract and by the addition of gum Arabic (1 g/l), CMC (1 g/l) and sugar (up to the concentration of 15% TSS) to the 12% TSS extract, showed solubility range of 48.66-75.00 sec, dispersibility and wetability of 0.4350.944 O.D and 32-72 sec, respectively. The organoleptic quality of the reconstituted Ext pure instant powder proved to be significantly (pX04 ;0.05) superior compared to reconstituting drinks prepared from the rest of the processed and unprocessed samples
