Résumé
A protein concentrate was isolated from the defatted meal of the xerophytic cucurbit Apodanthera undulata Gray, This globulin fraction was obtained from soluble seed embryo protein by extraction and precipitation in sodium chloride solution. A diet incorporating this concentrate as the sole protein source was fed to mice for 21 days. Values for protein efficiency ratio8 apparent protein digestibility, protein score, essential amino acid index, ratio of the content of each essential amino acid to the content of total essential amino acids, and biological value were established from this study. Tryptophan was shown to be the first limiting amino acid in the diet.
